Confused about different skilled visas

Hi there, I'm a Canadian chef and I want to move permanently to Australia. I looked into skilled visas and there are a few but I'm confused about which ones apply to me. There is one under the category 189 and another and another described as skilled provisional regional visa. It looks like the immigration department are only accepting skilled regional visas at the moment. Which I am happy to apply for. I have a few questions:

Is there a quota for each month?

Does anyone know where I can find out more about the skills assesment? Ie. how it is done, what kind of paper work, is it very in-depth?

Has anyone come up against any barriers whilst applying?

Does it really take 11 months to be granted the visa. In which case, you must wait in your home country until you are accepted?

How does one get nominated?
